I've tried to set the icon color on the left panel of the icon
"enlarged" view. I can choose 2,16 and 256 colors respectively but I
couldn't choose 24 bit color where the MFC default icon can. Does
anyone know how?

It's a limitation of the icon editor built into VS IDE. You need a
third-party tool to edit icons with 16-bit colors and higher. Once you
created an .ICO file, you can add it to your resources and use it in
your application (but you still won't be able to edit the icon in the
IDE).
